The story of Zacapa begins in 1976, commemorating the 100th anniversary (centenario in Spanish) of the Guatemalan town of Zacapa. Rum production in Guatemala dates back centuries, but Zacapa aimed to create something extraordinary. They looked beyond the traditional methods and embarked on a path of meticulous craftsmanship and unique aging techniques.

The “House Above the Clouds”: The Secret to Zacapa’s Allure

Zacapa’s aging process is the heart of its exceptional character. The rum embarks on a high-altitude journey, traveling from the lowlands where it’s initially distilled to the “Casa del Ron Zacapa” (The House Above the Clouds) in the Guatemalan highlands. This dramatic elevation change plays a crucial role. The cooler temperatures slow down the aging process, allowing the rum to mature gracefully and develop its signature smoothness.

The “Sistema Solera”: A Symphony of Aged Rums

Zacapa employs the “Sistema Solera,” a traditional aging method used for sherries and brandies. This intricate system involves a series of barrels that previously held American whiskey and sherry or Pedro Ximénez wines. Younger rums are placed in these seasoned barrels, gradually absorbing the character and complexity of the aged rums already present. As older rums are bottled, they are replaced with younger ones, creating a continuous flow of maturing spirits and a beautiful blend of flavors.
